    These pumpkin waffles are made by adding canned pumpkin and pumpkin spice to your favorite buttermilk pancake mix. This recipe is super quick, easy and delicious.

    You're going to love this easy, festive breakfast to make during the fall. Keep things simple by fancying up a boxed pancake or waffle mix! Simply add some pumpkin puree and pumpkin pie spice to infuse your pancakes or waffles with delicious fall flavors.

    I opted for waffles because you can't beat a soft and fluffy pumpkin spice waffle with crispy edges, topped with pure maple syrup!

    Pumpkin spice screams fall and these pumpkin waffles deliver! This recipe is packed with delicious pumpkin flavor and gives traditional waffles a seasonal twist. This is a go-to recipe when I'm trying to use up pantry staples and make an easy breakfast that tastes great.

    Made with Buttermilk Pancake Mix and Canned Pumpkin Puree

    No need to make pancake or waffle mix from scratch for this recipe! Sometimes we just need a shortcut and a time saver when we're feeding ourselves or our families. Using store-bought buttermilk pancake mix makes this recipe so simple and quick to whip up. This is a great way to introduce young kids to baking and helping out in the kitchen as well!

    Baked in a Dash Mini Waffle Maker

    I love my Dash mini waffle maker because it's compact and makes great waffles. (Not sponsored! Just a helpful tip) This is the perfect kitchen tool if you are baking for one or two people or if you have limited kitchen space. I'm talking to you, apartment and dorm room bakers 🙂 The waffles do cook very quickly though, so totally works for more than 2 people! I like to put my waffles on a baking sheet to stay warm in the oven as I continue to make them one at a time. This also helps your waffles get a nice crispy, toasted exterior.

    Top with Pecans, Pure Maple Syrup or Chocolate Chips

    When ready to serve, top your pumpkin spice waffles with chopped pecans or chocolate chips and some pure maple syrup. This flavor combo is amazingggg. Bonus points if you candy your pecans first! For chocolate lovers, add some chocolate chips to the batter before baking your waffles.

    Can I add canned pumpkin puree to waffle mix?

    Yes! You may use waffle mix if you don't have pancake mix. I would refer to your brand of mix's instructions and ingredient ratios to be sure they are similar to what I have listed in this recipe. You may need to do some tweaking if your brand of mix calls for different ingredients or ratios.

    What can I substitute for pumpkin puree?

    I would recommend using mashed sweet potato or mashed banana in place of canned pumpkin. Let me know if you try one of these variations and how it works out!

    Can I freeze waffles?

    Yes, to freeze your waffles, lay them out on a parchment-lined baking tray so they are not touching. Place the tray in the freezer until your waffles are frozen. Transfer waffles to a large Ziploc bag and return to the freezer until ready to use. Waffles are best enjoyed within 1-2 months of freezing.

    How to store pumpkin waffles?

    Simply wrap your leftover stack of waffles in aluminum foil and keep in the fridge. Add to a toaster oven, skillet or oven to heat before enjoying.

    These pumpkin waffles are made by adding canned pumpkin and pumpkin spice to your favorite buttermilk pancake mix. This recipe is super quick, easy and delicious. The perfect fall breakfast!

    Ingredients

    Units Scale
    • 1 ¾ cup buttermilk pancake mix
    • ¼ cup brown sugar
    • 1 teaspoon pumpkin pie spice
    • ¼ teaspoon cinnamon
    • ⅛ teaspoon salt
    • ½ cup pumpkin puree
    • 1 large egg
    • ¼ cup neutral oil
    • 1 cup water

    Instructions

    1. In a mixing bowl, whisk together the dry ingredients. 
    2. In another bowl, whisk together the wet ingredients. 
    3. Add the dry ingredients to the wet ingredients and stir to combine. 
    4. Turn on your waffle maker and preheat. Use a ¼ measuring cup to spoon your batter onto the hot waffle maker. Bake with your waffle maker's settings or until the waffle is lightly golden and cooked through.
    5. Repeat the baking process until you've used all of the batter. The number of waffles depends on the size of your maker. 
    6. Serve with a pat of butter and pure maple syrup. Pecans or chocolate chips would make great mix-ins or toppings with these pumpkin waffles.

    Notes

    This recipe makes about 15 mini waffles and serves about 5 people. The number of waffles depends on the size of your waffle maker. 

    I used the Trader Joe's buttermilk pancake mix.

    I used olive oil, but you can use canola, vegetable, avocado or melted coconut oil. I have not tested with melted butter.

      I asked AI to give me a recipe for pumpkin waffles using my buttermilk pancake mix on hand, this is the recipe!!

      This recipe was perfect. The waffles were so soft and fluffy. I used pumpkin spice in place of cinnamon. Perfect pumpkin flavor.

      The clock was ticking, and dinnertime was looming with no plan. I had all the ingredients for this dish on hand. Not only did my 6 year old enjoy eating them, she cheerfully helped me make them as well! Thumbs up for ease and convenience! Made enough to freeze the leftovers for breakfast before school all week.
