Easy Pumpkin Waffles

These pumpkin waffles are made by adding canned pumpkin and pumpkin spice to your favorite buttermilk pancake mix. This recipe is super quick, easy and delicious. The perfect fall breakfast!

Ingredients

  • 1 3/4 cup buttermilk pancake mix
  • 1/4 cup brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1/4 cup neutral oil
  • 1 cup water

Instructions

  1. In a mixing bowl, whisk together the dry ingredients. 
  2. In another bowl, whisk together the wet ingredients. 
  3. Add the dry ingredients to the wet ingredients and stir to combine. 
  4. Turn on your waffle maker and preheat. Use a 1/4 measuring cup to spoon your batter onto the hot waffle maker. Bake with your waffle maker's settings or until the waffle is lightly golden and cooked through.
  5. Repeat the baking process until you've used all of the batter. The number of waffles depends on the size of your maker. 
  6. Serve with a pat of butter and pure maple syrup. Pecans or chocolate chips would make great mix-ins or toppings with these pumpkin waffles.

Notes

This recipe makes about 15 mini waffles and serves about 5 people. The number of waffles depends on the size of your waffle maker. 

I used the Trader Joe's buttermilk pancake mix.

I used olive oil, but you can use canola, vegetable, avocado or melted coconut oil. I have not tested with melted butter.
