How To Make Peanut Butter Chocolate Chip Banana Bread:
You don't even need a mixer to make this recipe! To a mixing bowl, add the mashed banana, peanut butter, coconut sugar, eggs, greek yogurt and vanilla. Whisk to combine.
Next, add the dry ingredients like flour, baking soda, cinnamon and salt. Stir until just combined and lastly add in the melted coconut oil and dark chocolate chunks.
Waiting to add the coconut oil until the end ensures it stays liquid. If you add melted coconut oil to cold ingredients, it will re-harden.
Pour the banana bread batter into a greased loaf pan and bake until a toothpick or knife inserted in the center comes out clean or with little crumbs.

Ingredients
- 4 small ripe bananas, mashed
- ¼ cup natural peanut butter
- ½ cup coconut sugar*
- 2 large eggs
- ½ cup greek yogurt, plain or vanilla
- ½ teaspoon vanilla extract
- 2 ¼ cup all-purpose flour, spooned and leveled
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon salt
- ⅓ cup coconut oil, melted
- ½-¾ cup dark chocolate chips
- ¼ cup peanut butter, for topping
Instructions
- Preheat oven to 425F. In a mixing bowl, combine mashed banana, peanut butter, coconut sugar, eggs, greek yogurt and vanilla.
- Add dry ingredients and stir baking soda into the flour before partially mixing ingredients. Don't over-mix in this step because we still have to add two more ingredients to the batter!
- Add melted coconut oil and dark chocolate chips to mixing bowl and mix until just combined.
- Grease a nonstick loaf pan or line with parchment paper. Pour in banana bread mixture and swirl extra peanut butter on top using a butter knife. Sprinkle with a dash of cinnamon if desired.
- Bake at 425F for 5 minutes and then reduce oven temperature to 350F and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean or with little crumbs.
Notes
No coconut sugar? You can use brown sugar instead. Pure maple syrup could also work!
Why bake at 425F for 5 minutes first? This baking technique helps you get a taller round dome shape on the top of the banana bread and create the best texture.
