These eggless chocolate chip cookies are life changing! With soft, chewy centers and lightly golden, crispy edges, you'll never need another cookie recipe. The secret to these perfect dark chocolate chip cookies is not using eggs!

Why You'll Love These Soft & Chewy Cookies:

Remember the giant chocolate chip cookies you would get for $1 in elementary through high school? That's honestly what this recipe reminds me of. I call these "school cookies" because they're extra soft and even make great under-baked cookies if that's your thing.

I promise you're going to fall in love with these cookies. They are soft and they stay soft days after being baked. Just trust me on this one guys and make these cookies asap! 😍

Plus, these easy cookies would make great ice cream cookie sandwiches! Be sure to save this recipe on Pinterest so you can come back to it when you're ready to make some fancy shmancy ice cream sammys for your next birthday bash.

    Chocolate Chip Cookies Without Eggs!

I know it may sound weird, but this chocolate chip cookie recipe without eggs is seriously THE BEST I've ever made!! Like where have these cookies been my entire life?! I am a soft cookie person. Get out of here crispy, stale cookies! ✌️

Instead of adding eggs, you add WATER. Am I sounding even crazier? Haha. This recipe can easily become vegan if you swap the butter for vegan stick butter. You're welcome!

How To Make This Eggless Chocolate Chip Cookies Recipe:

Before you get starting, soften your butter in the microwave for a few seconds or allow it to rest on the counter. Beat the softened butter and sugars together for several minutes until light and fluffy. Scrape down the sides a few times and keep beating until the butter and sugar mixture has lightened in color.

Next, add in the room temperature water and vanilla extract. Beat on low-medium at first and then increase the speed to medium-high. When you add the water, the mixture will look curdled or separated. After a few more minutes of beating, the butter and sugars will come back together to form a light and creamy mixture again.

Now it's time to add the dry ingredients. Spoon and level the flour to get a more accurate measurement and add to the mixing bowl. Next add the baking soda, baking powder and salt. Use the measuring spoon to gently stir the rising agents into the flour before turning on your mixer.

Mix the dry and wet ingredients together on medium speed until just combined. Your cookie dough should look sticky and start to form a large dough ball around the beater.

Lastly, fold in the chocolate chips. Use a cookie scoop or a large spoon to scoop the dough and roll into about 2'" balls. Place cookie dough balls onto a parchment lined baking sheet and bake at 350 for 12-15 minutes.

    Baking Tips:

Bake for about 12 minutes for a slightly under-baked cookie and bake for about 15 minutes for a more baked cookie. Baking times will vary from oven to oven, so keep an eye on your cookies and take them out when they look good to you!

Remove the eggless chocolate chip cookies from the oven when they are lightly golden brown. These cookies without eggs will look slightly puffy with under-baked middles when first removed from the oven, however they will flatten out and continue to bake as they rest. Allow cookies to cool before eating.

    Everything You'll Need

    Need to make a substitution?

    Vegan?

Simply substitute vegan stick butter and this recipe instantly becomes vegan!

I prefer to use a mix of dark and semi sweet chocolate in this recipe. But any chocolate chips will work! You can use mini chips, milk chocolate or even a chopped chocolate bar.

    • Yield: 12 1x
    • Category: Dessert
    • Method: Bake
    • Cuisine: American

    Ingredients

    Units Scale
    • ½ cup salted butter, softened
    • ¼ cup white sugar
    • ¾ cup brown sugar, lightly packed
    • ¼ cup water, room temperature
    • 2 teaspoons vanilla extract
    • 1 ¾ cup all-purpose flour, spooned and leveled
    • ¾ teaspoon baking soda
    • ¼ teaspoon baking powder
    • ½ teaspoon salt
    • 1 cup chocolate chips (I use ½ cup dark and ½ cup semi-sweet)

    Instructions

    1. Cream together softened butter and sugars for several minutes until light and fluffy, scraping down the sides.
    2. Gradually add in water and vanilla extract and beat to combine. (The water will cause the mixture to appear curdled. Turn your mixer on medium-high and beat for a few more minutes to bring the ingredients back together.)
    3. To a mixing bowl, add dry ingredients including flour, baking soda, baking powder and salt.
    4. Stir in the chocolate chips and chill the cookie dough in the fridge for 30 minutes or more.
    5. Use a cookie scoop or spoon to portion out the dough to 2" balls. Place on a parchment lined baking sheet and bake on the center rack at 350F until the edges are golden brown, for about 12 minutes. The cookie centers will look puffy and under-baked, but trust the process!
    6. Let the cookies cool to set. They will flatten out and continue cooking after they're removed from the oven. Wait until the cookies are set, 5 minutes or so, before transferring so they don't fall apart.

    Notes

To make this recipe vegan, swap butter for vegan stick butter.

Chilling the cookie dough creates a chewier texture. I recommend at least 20-30 minutes, but you can also store the dough in the fridge for a few days and bake off a few cookies at a time as well!

I typically bake 4-6 cookies at a time so there is enough room for them to spread out.

For an under-baked cookie, bake 10-12 minutes. For a crispier cookie, bake 12-15 minutes.

Baking times and how your cookies will spread may vary depending on your oven!

It’s actually the flour that makes cookie dough unsafe, not just the eggs.

These are some of the best chocolate chip cookies I have ever made. I suggest using mini chocolate chips though, since it makes them look and taste better. Also, add in the dry ingredients in increments to prevent any clumping.

Hi i substituted the butter for dairy free butter but my cookies didn’t spread out very much they look nothing like your photos. Are you meant to keep in balls or flatten out a bit? They tasted good.

Hey Jo, thanks for leaving your notes! Now that you've made the recipe with dairy free butter and want flatter cookies, you could try flattening your dough balls a bit before baking to help encourage this process. Otherwise, you can try tweaking the ingredient amounts and see if you find that a little less flour or even melted butter instead of softened butter helps them spread out more. Good luck!

We felt like cookies but didn’t have eggs and tried this recipe and it’s truly amazing and we like it better than our traditional chocolate chip cookie recipe. We had only unsalted butter so added a pinch more salt and only had baking soda so used one tsp to cover the absent baking powder but it turned out perfect. Thanks again!

Amazing! So good! I did 50/50 brown and granulated sugar and increased salt by 1/4 teaspoon as I used unsalted butter. I only had semi sweet chocolate chips and thought these turned out great! I did 6 per sheet and had no issues with spreading into each other.

As a diehard chewy chocolate chip cookie lover, I was a little skeptical of eggless cookies but the price of eggs led me to try these. Holy moly are they good! I like them better on day 2 than fresh baked and I doubt there will be any by day 3 for another variance. I'm keeping and sharing this recipe! (Note, I made these with a size 50 cookie scoop and yielded about 24 cookies. I forgot to count.)

Hello, Thanks for this recipe. When you say 2 inches dough ball, how much is that in Tbsp or may be even in oz, so I can weigh them? My cookie scoops are in Tbsp. Wondering which one will be closest to 2 inches.

Hey Neha, Thank you for your question! I have not weighed the cookie dough balls before, but 2 or 3 tablespoons should be a nice size. Typically, my dough balls fit nicely in the center of my palm, maybe the size of a cutie (Clementine mandarin) or a touch smaller haha. You can definitely adjust the size to your liking if you want smaller cookies or larger ones. Good luck and enjoy!!

I used this recipe because I was in the mood to bake and didn’t have any eggs. This is now my go-to recipe even if I have eggs. I doubled the recipe and added in a 2 full-size Hershey’s chopped, 1 cup of dark chocolate morsels and some milk chocolate/Heath bits. I also used a giant scoop to make monster sized cookies and doubling the recipe I got about 14 monster sized cookies. I had to bake them about 19 minutes due to their size, but these are perfectly crisp on the outside with the chewy soft middle and even my husband was blown away. Can’t wait to make these with different add-ins!

Thanks for posting a solid eggless cookie recipe! Really enjoyed making these with my young son and not worrying about salmonella.
As for the results, I think my expectations were too high after reading some of the other reviews.
For folks who came here because they're out of eggs but are used to eating eggful cookies, I will say that though they are a nice texture, the taste was woefully missing something. So go in not expecting too much, and be less disappointed than I!

These is the best chocolate chip cookie recipe I've ever made!! They turned out just like you described, crispy edges and chewy, gooey centers. I like my cookies soft and a little bit under baked and I found 10-12 minutes was perfect in my oven. I also tried the pan banging technique you mentioned. This was the first time I had heard of this and I think it really helped flatten out the cookies. I used semi sweet chocolate because that's all that I had, but next time I'm going to try dark chocolate. SO good! Thank you!

These really are the best cookies! I’d been subbing Aquafaba for eggs in traditional cookie recipes as my boyfriend has an egg intolerance. Decided to search for eggless recipes, and could NOT believe how amazing these are! I make them in mini muffin tins and get about 30 bite-sized cookies. Just wanted to correct a few weights on the metric recipe:
      1 cup chocolate chips = 170g (not 224!)
      1/4 cup white sugar = 25g (not 50!)
3/4 cup lightly packed brown sugar = 160g (not 150g)
      1 3/4 cup flour = 210g (not 219)

Though the recipe is still amazing with the wrong conversions! Did it that way the first time. 🙂

I made these cookies today 5-21-23 and I really like these cookies. I followed the recipe to the letters and numbers and I must say the cookies deserve 5 stars. The chef really researched the recipe; probably tested it numerous times, and landed on this delicious batch of cookies. The only thing I did differently was use table salt instead of what I usually use is sea salt and I am glad I did. They needed the extra salt. I love this recipe. TFS

I am glad you replied because I made these cookies again and used browned butter. Take it from me if your readers want to try browning the butter, and tell them not to waste their time. It did nothing for the flavor and it left the cookies dry and crumbly. Thank you for caring enough to share your recipes. God bless.

These cookies were amazing. I don’t know the science behind them, basically subbing water for eggs, but it works beautifully. Whether you are a vegan, ran out of eggs or just want to try a great cookie recipe, this one is it! Thanks so much!!

Hey Mary Ann, I'm so glad you loved my eggless chocolate chip cookies! Eggs are made up of about 75% water which is why this substitution works in this recipe! Thank you for leaving a 5 star review! Enjoy 🙂

Hey Pat, thanks for coming back to leave a 5 star review for these eggless cookies with chocolate chips! I am so glad you and your grandkids can enjoy these cookies together.

I have made this recipe manyyy times over the years, but I cannot remember exactly if I have doubled it before! I might have once. I think it should be fine if you double the recipe. However, I would just keep an eye on all of your measurements to make sure you've got everything measured out correctly! I use the spoon and level method when measuring flour and get eye level with the glass measuring cup for the water so I can ensure it is just the right amount. Good luck!

Hey Linda, Thanks for trying out recipe! I recommend stirring and fluffing up your flour before scooping, and using the scoop and level method when measuring your flour so you get more accurate measurements. I've made this recipe dozens of times and have used a few different ovens, sometimes the oven will impact the bake of the cookies. If you want a denser, chewier cookie, you can try the "pan banging" technique or flatten the cookies with the bottom of a spoon or measuring cup a bit when they are almost done baking. You could also experiment with removing the baking soda or baking powder if you find your cookies are still rising too much. Good luck!

Perfect for a rainy day! I felt like making cookies but didn't have any eggs, and here in Austria the shops are closed on Sundays. Found this recipe and went for it. Wow! These cookies turned out really great! Delicious, chewy but slight crunchy around the outside and the eggs aren't missing at all. Clear recipe and also awesome you have the conversion mode for metric grams!

Hey there, I have not tested this recipe with oil so I cannot speak to how they would turn out. Oil will change the recipe for sure. I have had another person leave a review saying they used coconut oil instead of butter to make these cookies vegan and that they turned out wonderful. Perhaps you could try that! I don't believe they melted the coconut oil, but instead left it in its sold form. Not positive on that though. Good luck!

I made these cookies and I love them. I have to admit I kept sneaking small pieces of the batter out of the refrigerator while it was chilling. I baked them and used a small melon ball scoop to make each cookie. I was able to bake about 24. They are just the right size for me for a small snack when I want something sweet and cheewy.

These cookies are in the oven, I read about half the recipe and mixed everything together really fast. I didn't see until now to refrigerate before cooking. Also I didn't use a power mixer and I rushed faster then anyone should do anything. I also didn't make nice balls and just used a spoon to keep my hands clean so the dough was in rough clumps. If they don't turn out as you can tell its not your fault. BUT I bet they do! I will keep you posted!

      Thanks

Hey Alex, thanks for trying out this recipe! I have only made the dough with a power mixer as it incorporates the ingredients really well. So mixing by hand could have contributed to the lumpiness. One of my favorite tricks for flatter cookies is the "pan banging" method - this is when you tap your cookie sheet onto a tea towel or soft hot pad to flatten out the freshly baked cookies. Hope you still enjoyed the recipe and give it another go in the future. Thanks!

I made exactly as written just with a 1/2 cup of chopped walnuts. This recipe is great! The cookies were soft and gooey on the inside but had the perfect crisp edges. Thank you!

Made this recipe because I realized I had no eggs and promised the kiddos we'd make cookies and found this recipe! No regrets and will make these always! I actually prefer this recipe to the standard one with eggs! (Plus its cheaper to make without them, ha!) Very surprised these were SO amazing!

We have been trying to change up our diet a bit to cut out so many animal products, and be a little healthier. But even healthy people need a nice, warm from the oven cookie sometimes. This recipe hit the spot. I love eggless cookies. Still soft, and chewy (even when room temp the next day). Appreciate that people like you do all the math of the recipe and share online for all of us. I look forward to trying some more of your recipes. Ever think of putting out an eggless dessert book? You should! 😊

Hey Niki, either brown sugar should work just fine. I tend to have light brown sugar more often than dark so that's what I usually use in this recipe!

Glad to have found a simple eggless recipe that didn’t call for a bunch of weird substitute ingredients. Easy recipe that came out great and satisfied my craving for soft cookies, though they took a little longer than 12 minutes to bake.

I had all the ingredients but didn’t follow the instructions quite exactly: I don’t have a stand mixer so mixed by hand. I didn’t have any parchment paper so used a non-stick cookie sheet with cooking spray. I forgot to chill the dough but still had some left over so chilled that for a second batch later. After 12 minutes in the oven they had barely started to flatten and weren’t golden brown so I baked them for another 5 minutes, then turned off the oven and let them sit in there for another 5, then resting for a final 5. They didn’t flatten much more so they were some chunky bois but still turned out delicious! Chewy with a slight crunch!

Thanks Annie! I'm glad you enjoyed these cookies and found good work-arounds so the recipe method fit your needs. One tip for flatter cookies is the "pan banging" method, where you tap the cookie sheet on a flat surface with a pot holder several times before returning the cookies to the oven for a few more minutes to finish baking. Bake times can definitely vary for different oven types and altitudes. I prefer an underdone cookie, so glad adding those extra minutes worked well for ya! Enjoy 🙂

Made it and they were delicious. Unfortunately they didn’t flatten out a bit. Could be because I used too many chocolate chips. Or maybe it was because I had an almost three year old granddaughter helping me. I can’t guarantee that the ingredients were measured exactly. But the experience was well worth it. Santa is gonna love them!

Thanks so much Randall. I'm glad you had fun making these cookies with your granddaughter! Next time, you could try flattening out your dough balls a bit before baking and/or banging the pan on a flat surface a few times at the end of baking to help them get a bit more flat. 🙂

Hey Laura, Yes! I have frozen this dough and it works out great. I would suggest letting the frozen cookie dough balls sit on the baking sheet for 5 minutes or so to thaw slightly before baking. I have some helpful tips in this post too: https://bakedabundance.com/how-to-freeze-cookie-dough-and-bake-from-frozen/

This was amazzzing. What I like about this recipe is that 1 with the lack of stock of eggs you can still make great chocolate chips cookies and also make it for those who don’t like eggs in baked goods

This maintains great level of moisture I slightly overcooked them they were brown but still were amazing.

My new go to for sure.

You need look no further for the BEST CHOCOLATE CHIP COOKIE RECIPE EVER because you’ve found it! I’ve made this recipe countless times and always keep a batch of dough in the fridge for a super quick treat. Do yourself a huge favor and convert the recipe into Metric and weigh your ingredients. It makes all the difference in the world in your finished product. I find a 30g dough ball to be the sweet spot even though a 2 inch ball converts to 20 g . Also, work fast when rolling into balls because the recipe is basically sugar and butter and warm hands make it soft and melty. Thank you for the recipe!

YUM! We were out of eggs and eggs wanted cookies so I searched for an egg free recipe. LOVE that you do not have to use applesauce or banana as a replacement, and that they just taste like a good ol chocolate chip cookie. I used gluten free flour as well so my husband could eat them and all 5 people in the house thought they were really good. Mine didn’t spread very much so they weren’t the most beautiful cookie I’ve ever made, but they’re tasted great. 5 ⭐️! And with the price of eggs these days, I’ll be bookmarking this recipe!

Coming back to leave a second comment now that I’ve made this a few times. It’s the best. I make them almost every week to take to movie night at my neighbors and people rave about them. It’s a great base recipe for various cookie flavors. I’ve tried various combinations - classic chocolate chip, white chocolate and macadamia, butterscotch, Reese’s/M&Ms. I also adapted this to the Inside Out cookie recipe so I could make an eggless batch of chocolate with white chips. My top tip for this recipe is DO NOT SCOOP the flour! When she says spooned and leveled she means it! I got lazy with that a few times and the cookies came out way too dense. The batter should be sticky to the touch but not so sticky that it stays on your fingers or is hard to handle. I am not historically a baker (too exact for my tendencies and I struggle with numbers/measurements) but this is so simple, even I can do it. More recipes, please!

If it's for edible cookies dough be sure to also bake the flour. It also contains salmonella. I'm not sure the needed temp Since I learned that after making microwave edible dough myself.

I have never been so moved to leave a review on a recipe … until now! Eggs have been so expensive at the grocery store that we’ve skipped them for a few weeks. Last weekend, we were desperate for a sweet treat, and so I had to go searching for anything eggless. That’s when I found this recipe, took a chance, and was IMPRESSED! I said, “Why did we ever put eggs in cookies before? These are perfect.” The dough is yummy, the same-day cookies are melty, and the next-day cookies are somehow even better. 100/10!

Such a great recipe. I have an egg allergy in my home and this is the first chocolate chip cookie recipe I have found that gives a "soft chewy" texture, rather than "crispy". Thank you for sharing it. Even my friends can't tell it's egg-free. I do cook for 18 min at 6,000 feet elevation.

Hi, thank you for your recipe! Our son is on an egg strike so I decided to find a recipe for cookies, then stumbled upon yours. May I ask if these can sit overnight? I usually let my dough sit overnight to avoid the wrinkles around the edges so I wonder if these will have the same result or will the water separate?

          Thank you so much!

They taste like subway cookies. Im vegan and these are as good as non vegan cookies. These might be better. I bake about 8 minutes in air fryer at 350. Then I flip them and bake 4 minutes longer at 330. Theyre soft on the inside and crisp on the outside. So crazy good. Unexpectedly good. I used mm’s minis in this batch. Those arent vegan but someone wasnt gonna eat them so I made the exception to use them. Beating the butter and sugar is essential. I beat the batter too on high speed. Dont get me started on these cookies. I half the recipe. It makes five. We also have these baking paper sheets for our air fryer that works well for them. These cookies are blonde as hell. I have some cooling right now.

These are really very good, very simple, very delicious, and almost perfect the first time 'round. Only question, I was in a bit of a rush when first making so I didn't add any vinegar/acidic agent since it wasn't noted as an ingredient. Obviously it didn't change much, but I did realise that that was why it didn't expand like you mentioned. Was this lack of acidic agent on purpose, or just assumed? It does put off new bakers not aware of this (a friend lol)

Hey Vi! This recipe does not call for vinegar or acid. Instead, the recipe includes both baking soda and baking powder and should be followed as written. Thank you and enjoy!! 🙂

These tasted delicious but the first batch didn't flatten and spread properly in the oven. I double checked the ingredients and quantities, but after 12 minutes in the oven and another 10 minutes cooling on the hot baking sheet they were still dome shaped. Didn't affect the taste though.
For my second batch I flattened the balls with my fingers before putting them in the oven and those came out good.

Thanks Jesse! Yes, flattening the dough balls a bit before baking or tapping the cookie sheets on a hard surface while baking can help these cookies flatten out if needed. Enjoy!

i dont think ive ever written a review for a recipe, but i absolutely had to for these. ever since ive developed an egg allergy ive been searching for a good recipe and these are perfect! i smacked them on the stove a few times after baking to make sure they were flat and chewy (not sure if it was necessary but it worked.) i used reeses pieces this time around and i will definitely be making more variants, thank you so much!!

Made these for the first time and followed the instructions, making sure to beat together the butter/sugar really well and when I added the water. I used a 2tbsp Oxo cookie scoop and baked for 12 minutes. My goodness! These for me are almost fail proof. I’ve done many different cookie recipes, and was craving some but didn’t have eggs and stumbled upon this and I am so happy I did! I feel like these are even better than other recipes I’ve done with eggs and the texture came out perfect with the middle being cooked, but the edges aren’t too crispy. 10/10 would recommend a try!

Made this recipe because I really wanted cookies but had no eggs.. one of the best cookies I’ve ever made. Tastes exactly like a regular cookie, my partner couldn’t even tell the difference.
I was a little nervous at the beginning because of how it was looking but eventually it came together and I’ve made them multiple times now!

I was confused on why salted butter is in the ingredient list if salt was already there. Followed the recipe anyways and they were too salty like I thought they would be so next time I would use unsalted or no salt. Aside from that they taste pretty good and are nice and soft I had no issues except for the saltiness.

OMG. I can’t believe how good these are without the eggs. You CAN NOT tell. I didn’t even chill before baking. First sheet had smaller cookies so I baked for only 10 mins. Center is gooey and edges are crisp. I used about a half cup dark brown sugar to a qtr light. Maybe added a richer taste? If you have someone with an egg allergy, they won’t feel left out with these!!!

Very good easy recipe and everybody loved them, especially the chewy cookie lovers. Made them for a friend with an egg allergy who absolutely loved that there were cookies they could eat.

Only thing I would change is to make smaller balls next time, the 2" balls did not flatten out well so they came out like big cookie mountains - and we ran out of cookies too fast!
