These pink chocolate covered strawberries are made with 4 simple ingredients: fresh strawberries, white chocolate chips, coconut oil, and natural red food coloring. Juicy, ripe strawberries are dipped in smooth melted white chocolate that is dyed a light pink. This recipe is gluten-free and can easily be made vegan and refined sugar-free.

  • 24 fresh strawberries (about 2 lbs. or 2 containers)
  • 11 ounces white chocolate chips (1 bag)
  • 2 teaspoons coconut oil (or another neutral-tasting oil)
  • 5-10 drops natural red food coloring

Instructions

  1. Rinse the strawberries and let them air dry on a paper towel-lined baking sheet until fully dry.
  2. Melt white chocolate chips with a little coconut oil in a microwave-safe bowl for 30-second intervals, stirring in between each interval, until smooth.
  3. Add a few drops of red food coloring to the melted white chocolate and stir until fully incorporated. Add more drops of food coloring for a more vibrant pink.

  5. Poke the top of a strawberry with a fork or a toothpick. This helps you dip the berry into the chocolate and not rip off any of the leaves in the process.
  6. Allow the excess melted chocolate to drip off the tip of the strawberry before placing it on a parchment-lined baking sheet.
  7. Arrange the chocolate-coated strawberries on the prepared baking sheet and let them rest until the chocolate is set or hardened. You can place the tray in the fridge or freezer for a few minutes to speed up the setting process.

  9. Store the finished chocolate coated berries in an airtight container. Keep at room temperature if serving the same day or store in the fridge for 1-3 days. Berries may have condensation or "sweat" after being stored in the fridge, this is normal!

  • To drizzle chocolate over the dipped berries, add some melted chocolate into a ziplock sandwich bag and cut a small bit off on of the corners. Use this as a piping bag to decorate the berries with a uniform drizzle of chocolate. You can also use a spoon and freestyle the drizzle for a fun, messier look.
