I came to peach cobbler after searching for recipes like my Scottish great grandfather's Apple with Dunfillan crust. Very sadly, I developed an intolerance for apples. I made your recipe tonight with preserved peaches and blackberries and served it with a home made custard. Great, easy recipe - perfect for a cold winter's night. Fresh peaches are better then canned but you got to blanch and peel- but if you have time, it's worth it! I did do some doctoring
1. Added an egg
2.Tbsp.sour cream
3.sprinkle of cardamom
4.( this is where it gets fun!!) A layer goat cheese crumbles on top- you don't really need whipped cream or ice cream
5. Roasted pistachios- I actually used sea salt and pepper roasted-
Basically what you end up with is a dish that teeters the line of sweet and savory- but with contrasting textures as well- people seem to like it! But your recipe jump started it- thankyou!
Give this a shot though- I've worked in many kitchens- that's J's world!!
