Hi Jessica! Thank you for trying this recipe and for your review. If your cookies did not expand much, I would suggest softening your butter in the microwave and melting it a bit. Melted butter > room temp butter typically increases how much cookies spread while baking.

I made these the other night and the turned out delicious! The only problem I had is they didn’t expand at all and I felt the dough was rather dry. I followed the recipe exactly. Is there something I’m missing?

Hey Alli, great idea to make these cookies ahead of time for Christmas. Since you are freezing and thawing on Christmas Day, you have nothing to worry about!! The cookies will taste fresh after thawing 🙂

I typically recommend people eat or serve homemade cookies in the first few days after baking because that is when they will be the most soft and chewy, and won't have a chance to dry out or go stale depending on storage. These cookies are still delicious for several days after they are baked. I just prefer to serve them as soon as possible! Enjoy!
