Here are some fun ideas you can try to customize your matcha cookies, from using different chocolate chips to rolling in sugar to drizzling with a glaze:
- Swap the white chocolate chips for another chocolate of your choice! Try milk or dark chocolate chips for a richer chocolate flavor.
- Make chipless cookies! I have also made this recipe sans chocolate chips and it is still just as amazing! The matcha powder really becomes the star of the show and you get to enjoy a tender, chewy cookie texture without any chocolate chips.
- Roll your cookie dough balls in “matcha sugar.” I have not tried rolling these cookie dough balls in granulated sugar before baking, but I imagine it would work well. Think cinnamon sugar as in what you would use for snickerdoodle cookies, but substitute the cinnamon for a little matcha powder.
- Drizzle these cookies with a glaze. A simple glaze is perfect if you skip the chocolate chips but still want to add something fun. I would recommend drizzling a vanilla, matcha or strawberry glaze on top. Most glazes are made with powdered sugar, vanilla extract and just a drop of milk or water to get a thinner consistency.

How To Make Matcha Cookies with White Chocolate
Step 1: Cream together softened butter and sugar in a bowl until light and fluffy. Add in egg and vanilla and beat to combine.
Step 2: In a separate bowl, add the dry ingredients and matcha powder. Stir until combined.
Step 3: Add dry ingredients to wet ingredients. Beat to combine and don't over-mix.
Step 4: The cookie dough will have a vibrant green color.
Step 5: Add white chocolate chips to the matcha cookie dough. Fold to combine.
Step 6: Use a cookie scoop to scoop 6 cookies onto a parchment paper-lined baking sheet at a time.

Step 8: Let cookies cool on the baking sheet. Store cooled cookies in an airtight container for up to 7 days.

- Place your oven rack in the center of your oven. The bottoms could burn if you bake cookies too low in the oven and the chocolate chips could burn if too high in the oven.
- Line your baking sheet with parchment paper to prevent sticking. I have not tried to make these cookies directly on the sheet pan or on a silicone mat.
- Use a medium-sized cookie scoop to portion out the cookie dough. Roll each dough ball in between your palms to form a round ball. Gently press the tops of each cookie dough ball into more white chocolate chips for a professional-looking cookie.
- This is a no-chill cookie recipe so you do not need to chill the cookie dough before baking. Chilling the dough may affect the bake and texture and you may end up with slightly taller, fluffier cookies that spread less since the butter in the dough is cold.

Freezing Instructions

How to store leftover cookie dough balls that have not been baked? Add unbaked cookie dough balls to a freezer bag. Leave some space in between each dough ball so they don’t stick together. Lay flat in the freezer.
When ready to bake, remove the cookie dough balls from the freezer and let them thaw at room temperature for a few hours or in the fridge overnight. If you’re in a rush or need freshly baked cookies ASAP, decrease your oven temperature by 25F and bake for a few extra minutes to ensure they are baked enough in the centers.
Baked cookies that are made with frozen cookie dough will not be exactly the same in appearance, texture, etc. as cookies that are made with fresh cookie dough.

- In a separate bowl, mix together the dry ingredients, making sure the matcha powder is fully incorporated into the flour.
- Add the dry ingredients to the wet ingredients in the mixing bowl, and beat until you have a sticky dough. Fold in the white chocolate chip cookies with a rubber spatula.
- Use a small or medium-sized cookie scoop to portion out the dough into about 12 to 15 dough balls. Roll scooped cookie dough in between your palms to form a round ball. Gently press the tops of the cookie dough balls into extra white chocolate chips. Place 6 cookie dough balls onto the prepared baking sheet, leaving at least 2 inches between each one.
- Bake the cookies on the center rack of your oven for about 12 minutes. The edges should look crisp, the white chocolate chips may start to look golden and the bottoms of the cookies may appear are lightly golden.
- Cool the cookies on the baking sheet for at least 3 minutes before transferring them to a plate or cooling rack to cool completely.
- Store the cooled cookies in an airtight container at room temperature for up to a week.
