Healthy Dark Chocolate Granola

This Healthy Dark Chocolate Granola is refined sugar-free and made with rolled oats, cocoa powder and chocolate chunks. A chocolate lover's dream!

Ingredients

  • 1 1/2 cups rolled oats
  • 2 tablespoons oat flour*
  • 2 tablespoons ground flax
  • 3 tablespoons cocoa powder
  • 1/2 teaspoon salt
  • 5 tablespoons honey
  • 2 tablespoons pure maple syrup
  • 1/3 cup pumpkin seeds
  • 1/2 cup chopped walnuts
  • 2 tablespoons + 2 teaspoons coconut oil, melted
  • 1/4 teaspoon vanilla extract
  • 1/2 cup dark chocolate chunks, add after baking

Instructions

  1. Preheat oven to 325F. To a mixing bowl, add all ingredients except chocolate chunks. Stir to combine.
  2. Line two baking sheets with parchment paper. Divide granola mixture between two prepared baking sheets and spread into an even layer.
  3. Bake for about 25-30 minutes until crisp. You can stir halfway through if you'd like, I usually don't remember to and it's fine either way. Do not over-bake or the granola will burn and become bitter.
  4. Let granola cool completely before adding chocolate chunks. Store in an airtight container. Serve with yogurt, fresh fruit, frozen raspberries or enjoy on its own.

Notes

To make this recipe vegan, substitute the honey for pure maple syrup.

When doubling recipe, divide granola onto two lined baking sheets instead of one.

Oat flour is simply blended rolled oats. You can substitute all-purpose flour here if that's easier.
