    Tips & Tricks

    • Before baking: For a professional-looking cookie, top each cookie dough ball with extra chocolate chips. This ensures you will have some chocolate chips on the tops of your cookies that are easy to see. They look so much prettier this way!
    • After baking: For extra flat and chewy cookies, try the "pan-banging technique". This is when you drop the baking sheet onto a soft potholder a few times immediately after removing the cookies from the oven. I recommend giving the baking sheet a few good taps onto the potholder and not actually dropping the baking sheet as I've seen a few other techniques mention. This way your cookies don't go sliding all over the place!
    • After baking: For perfectly round cookies, use a butter knife to gently tap the edges of the cookie to create a perfect circle while they are still warm. I do this once I take them out of the oven. Say goodbye to any of those wonky edges!

    Frequently Asked Questions:

What cocoa powder should you use?

I recommend using unsweetened cocoa powder in this cookie recipe. Other options include cacao powder, dutch processed cocoa and black cocoa powder. I have not tested this recipe with other cocoa powders. Any of these should work!

What chocolate chips should you use?

You can use any chocolate chips in this recipe. I personally love dark chocolate or bittersweet chocolate. But semi-sweet, milk or even white chocolate chips will work!

Can you make these cookies vegan?

To make this recipe vegan, you'll need to swap the butter for vegan butter or coconut oil. I have not tested this myself yet, but I have had a few people tell me they tried both of these alternatives and it worked great!

Can you make this recipe gluten-free?

To make this recipe gluten-free, I recommend using a 1:1 baking flour that is most similar to traditional all-purpose flour. I have not tested this myself yet, but I hope to soon!

    • Cuisine: American

    Ingredients

    Units Scale
    • ½ cup salted butter, softened
    • ¼ cup white sugar
    • ¾ cup brown sugar, lightly packed
    • ¼ cup water, room temperature
    • 1 teaspoon vanilla extract
    • 1 ¼ cup all-purpose flour, spooned and leveled
    • ½ cup cocoa powder
    • ¾ teaspoon baking soda
    • ¼ teaspoon baking powder
    • ½ teaspoon kosher salt
    • 1 cup chocolate chips

    Instructions

    1. Preheat the oven to 350°F (180°C).
    2. In a large mixing bowl, cream the softened butter with the white sugar and brown sugar until smooth and fluffy.
    3. Add the room temperature water and vanilla extract, and beat until well combined. The mixture may separate and look curdled. Keep mixing until the water is well incorporated and trust the process.
    4. In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and kosher salt.
    5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    6. Fold in the chocolate chips until evenly distributed throughout the dough.
    7. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, leaving about 2-3 inches of space between each cookie. I bake 6 cookies on an extra large baking sheet or 4-5 cookies on a standard baking sheet.
    8. Bake for 12 minutes, or until the edges are set and the center is slightly soft.
    9. Once you remove the cookies from the oven, you can try the “pan banging” technique to flatten the cookies and create crinkly edges. Be sure to have a thick tea towel or soft pot holder on your counter so you tap the baking sheet onto a soft surface. Two or three taps should do the trick!
    10. Allow the cookies to cool on the baking sheet for at least 5 minutes before enjoying them.

    Notes

How to make these cookies less chocolatey: If you don't want as strong of a chocolate flavor, you can use the following flour and cocoa powder ratio, 1 ¼ cup + 2 tablespoons flour and ¼ cup + 2 tablespoons cocoa powder.

How can the "less chocolatey" suggestion to use "1 ½ cup + 2 tablespoons flour" (MORE flour than the original 1 1/2 cup called for by the recipe) and "¼ cup + 2 tablespoons cocoa powder" (MORE cocoa powder than the original 1/4 cup called for by by the recipe) be correct?

Is it possible that the recipe actually include "1/2 cup of cocoa powder"? I really want to make these cookies but 1/4 c. of cocoa powder doesn't seem like enough so I wanted to check with you first.

Thanks for any help you can provide!

Hey Debbie, thank you for asking about this! There happened to be a small typo in the recipe card that has now been updated. You are correct on the 1/2 cup in the original recipe. Thanks for your help! I hope you make these eggless chocolate cookies and enjoy them 🙂 Good luck!

I have made Double Chocolate Cookies for years and they were always a favorite of my grandchildren. When I found out that one of my grandsons had an egg allergy, I began looking for a new recipe but couldn't seem to find one that measured up to my cookies with eggs. The last one I tried was very "chocolatey" but had a granular texture, like the sugar hadn't quite dissolved. The kids seemed to like them but I felt sure that there was something better out there, and after reading countless recipes and reviews, I have finally found it. These cookies are amazing! I can't wait to serve them to my family at Christmas. Thanks, Marley! I'm looking forward to trying some of your other recipes!!!

hello! i would not recommend using hazelnut or almond meal. but, you could try substituting the all purpose flour for a 1:1 gluten free baking flour (I like Bob's Red Mill).

      Delicious!
My husband doesn’t eat egg but otherwise can do dairy so this recipe is perfect for him. I am glad the recipe specified that the batter would look curdled after adding the water - it never really seemed to smooth out until I added the dry ingredients. (But I trusted the process!) They are absolutely delicious. They did spread a lot so having a lot of space on the cookie sheet was necessary. Overall, amazing recipe!

I have been making this recipe for a few months now and I am a fan! I don’t really like eggs and I never thought you could make cookies without them until I found this recipe with ingredients everyone probably has.
I don’t really like add a little molasses like a tsp or so to the sugar mixture.
I have made them with stuffed Nutella and I have done it with browned butter adding chopped up candy bars or whatever I want to experiment with..
It’s a great base and you can add what you want!
My daughter’s friends love them too!

Hey Vidya, I have not tested this recipe with any other sugar substitutions besides what is listed in the recipe card. You could try swapping the brown sugar for coconut sugar. However, this will likely affect flavor and texture. Good luck!!

These are sensational right out of the oven and still very tasty after they cool off. I used peanut butter chips and the cookies didn't flatten out a lot. I am happily surprised how well they turned out.
