Easy Apple Hand Pies

These easy apple hand pies are filled with warm baked apples, cinnamon, and brown sugar. These mini pies are easy to make and are in and out of the oven in 30 minutes. This apple hand pie recipe is the perfect fall dessert!

Ingredients

Apple Filling:

  • 3 heaping cups of diced apples (about 4 small apples)
  • 1/3 cup brown sugar, lightly packed
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons salted butter

Additional Ingredients:

  • 3 store-bought or homemade pie crusts
  • 1 egg yolk mixed with 1 tsp water for egg wash
  • 3 tablespoons coarse turbinado sugar, for topping*

Instructions

  1. Dice 3-4 peeled apples into small cubes and add to a small pot along with the brown sugar, cinnamon, lemon juice, cornstarch, and butter.
  2. Heat apple mixture over low to medium heat, stirring with a rubber spatula frequently so the sugar does not burn. Stir frequently and cook until the apples begin to soften, about 15 minutes or so. Remove from heat.
  3. Preheat oven to 375°F. Line two baking sheets with parchment paper.
  4. Cut three circular pie crusts in half to make 6 pieces, 5 for individual hand pies, and the 6th piece for cutting out leaf decorations. Add about 3 tablespoons of apple filling to one side of each half.
  5. Fold over the pie crust to cover the apple filling. Use a fork to score/pinch the edges together. Take a sharp knife to cut a few small slits into the tops of each hand pie. This allows steam to escape while baking.
  6. Brush each hand pie with egg wash and sprinkle with a teaspoon of turbinado sugar. Bake the hand pies for 25-30 minutes or until the crusts are golden brown.

Notes

  • Turbinado sugar substitute: You can also use regular granulated sugar for topping.
  • Vegan/dairy-free: Substitute the butter in the apple filling with two tablespoons of vegan butter (in stick form) and use non-dairy milk instead of the egg wash. Just be sure to not oversaturate the tops of the pie crust with the non-dairy milk.
  • Refined sugar-free: Substitute the brown sugar for honey or coconut sugar and skip the extra sprinkle of sugar on top. I've only used brown sugar and have not tested either of these sweeteners.
