    Dark Chocolate Bourbon Pecan Pie

    Why You'll Love This Boozy Holiday Pie!

    So friends, I already thought I discovered the ultimate pie recipe for fall when I baked a pumpkin pie with a gingersnap cookie crust (here's the link if you're craving a twist on a classic pumpkin pie)... but now I may have a new personal favorite after tasting this decadent pecan pie!

    I haven't been a big fan of pecan pies that I had tried in the past, they were always too boozy and just not my thing. Oddly enough, my boyfriend and I split a slice of homemade chocolate bourbon pecan pie at a quaint little restaurant at the beach last summer, and it was AMAZING. Ever since we tried their homemade pie, I knew I needed to make my own so we could enjoy it back home.

    What I love about this recipe in particular is that it's the perfect balance of everything you want: not too sweet, just enough chocolate and not drowned in bourbon.

    Made with Crunchy Pecans and Dark Chocolate

    I like to use chopped pecans for the pie filling and save any whole pecans for the top layer to create an elegant, tidy look. Fresh pecans have the best flavor, but frozen pecans are just fine too! I typically store my nuts in the freezer to lengthen their shelf life.

    For the chocolate, make sure you choose high-quality chocolate for the best flavor. I always look for chocolate bars or chocolate chips with a high cocoa percentage as this is an easy indicator of the quality.     How To Make Dark Chocolate Bourbon Pecan Pie:

    You can whip up this recipe in no time! First, grab your homemade or store-bought pie crust and press it into a pie dish. Use a fork to poke a few holes in the bottom of the crust.

    Next, add the filling ingredients to a medium mixing bowl. Start with the eggs, light corn syrup, brown sugar and vanilla extract. Mix the ingredients together and then add in the melted butter, bourbon, pecans, chocolate chunks and salt. Stir to combine.

    Pour the filling into the prepared pie crust and bake uncovered. Towards the end, you may cover the pie with foil to prevent the crust from getting too brown. Once baked, allow the pie to rest until room temperature and then place in the fridge to cool completely. Enjoy on its own or serve with fresh whipped cream or vanilla ice cream.

    Need to make a substitution?

    No Bourbon?

    Feel free to leave out the alcohol if desired. This pie is still delicious without any bourbon.

    No Dark Chocolate?

    If you don't have or don't care for dark chocolate, I recommend a high-quality semi-sweet chocolate in this recipe.

    Chocolate Chips, Chunks or Bars?

    All of the above will work in this pie. I like to use chocolate chunks since they are a smidge bigger than chips. You can also use a sharp knife to chop a chocolate bar into small pieces to incorporate into the pie filling.

    Ingredients

    Units Scale
    • 1 pie crust, homemade or store-bought
    • 2 large eggs
    • ¾ cup brown sugar
    • ¾ cup light corn syrup
    • ½ teaspoon salt
    • 1 tablespoon vanilla extract
    • 2 tablespoons salted butter, melted
    • 3 tablespoons bourbon, optional
    • 2 ¼ cups pecans, chopped
    • 1 cup dark chocolate chunks

    Instructions

    1. Preheat oven to 350F. Prepare a 9" glass pie dish with your pie crust. Crimp the edges and poke with a fork.
    2. Bake just the crust for 8-10 minutes to prevent a soggy bottom.
    3. To a mixing bowl, combine eggs, brown sugar, salt, corn syrup, vanilla, melted butter and bourbon.
    4. Stir in chopped pecans dark chocolate chunks.
    5. Pour filling into par-baked pie crust and bake at 350F for about 50 minutes. Let cool before slicing. Serve with vanilla ice cream or whipped cream. Store in the fridge for a 3-5 days.

    Notes

    You may cover the edges of your pie dish with foil to prevent your crust from getting too brown.

    Remove from fridge and let rest on the counter for at least 15 minutes before serving.

      I love this recipe! The ingredients are super simple which makes the pie so quick and easy to make. I don't normally make pies because they are challenging but this one is very straightforward and so delicious!

      Great recipe! Lots of yummy noises coming from everyone while eating it. It says to refrigerate for 3-5 days but it won’t last that long!
